I know there are lot of studio pictures these days, but really, this is where I spend the majority of my time lately.
I’m here to ask you all for some ideas… Something that often gets neglected when I’m busy working, is meal time (aside from dinner, which my boyfriend generously cooks for us every night). I do take breaks for snacks, like toast with cheese, nuts and seeds, dried fruit (and organic trek mix and dark chocolate from the best parents in the universe!); but some days it is easy to forget until I realize I’ve become a total space cadet. It helps a lot to have quick, easy, mess-free meals that I can bring up with me during the day. Smoothies are my favorite (the meal-in-a-cup), but variety would be nice sometimes, you know? So, I thought I’d ask you all, what nourishing foods do you like to have when you are eating on the run? I’d love to hear!

I use to keep a medium bowl with brown rice already made, so I can toss some tomatoes, hard boiled eggs, or any other thing in it and eat.
Also, I do a lot of homemade granola + homemade greek yogurt + dry fruits + fresh fruit + honey + cinnamon + whatever!
Scrambled eggs with toast and honey also.
(You can guess I love eggs now…)

SOUP!! i love having a big pot of soup with beans and veggies made for the week. then it is just a quick heat up and so satisfying and filling. i am always leaving the house on work days without nourishment. the afternoon hits and i am so famished when i get home i can hardly wait for dinner. lately i have been bringing soup or stew with me and i feel so much better. yesterday i had a big container of sauteed zucchinni, tomatoes, mushrooms, and corn that i made a big pot of for the week. it kept me filled for a while. i also love hummus with cut up veggies and apples. i love chickpeas! another yummy snack is roasted garbanzos. i toss with olive oil, garlic salt and curry powder and bake in the oven until they get a little crispy.i do love smoothies too. i throw spinach in mine for a little extra brain power!

Amy seriously stole the words right out of my brain! On Sunday afternoons I gather the ingredients for either soup or chili, depending on my mood, chock full of beans and veggies and cook up a large pot full. They store in containers really easily, and can be heated up quickly. Also, hummus and veggies and/or crackers. I also always keep fresh fruit and veggies on hand, nuts, berries, and applesauce. Other times, when I need a pick me up, but not a whole meal, I eat a spoonful of peanut butter. My favorite kind is Dark Chocolate Dreams from Peanut Butter & Co: http://ilovepeanutbutter.com/

luke likes to make black bean & sweet potato burritos on sunday & then wrap them up & freeze them for lunches throughout the week. we warm them up for two minutes & they’re just as fresh as when he made them.
also, i really love boiled eggs or grapefruit for a quick snack.
honestly, i find myself snacking on bread far too often {i work at a local bakery} so i might not be the best to ask. 😉
but if all were perfect in the world, a smoothie or a piece of toast with peanut butter & banana would be my choice! 😉

you girls are just too awesome. Loving these ideas! Hard boiled eggs are a great idea I often forget. I don’t eat them super often but they are always a huge boost for me. And soups and stews! Of course! The perfect “meal in a cup.” All the leftovers/prepare ahead ideas are excellent. Keep ’em coming! I am getting inspired! (Natalie, you and Luke are just so sweet and supportive with each other. I love it. And about the handpicks, really? I will have to check it out!)

“Pasta fredda” (cold pasta) is one of my favorite, my meal when I went to University. You can keep a bowl of cooked pasta in the fridge (pasta is very quick to cook, like 8-12 minutes) and then season it with whatever you like: extravirgin olive oil of course, tomatoes, cheese, mozzarella, basil, olives… Is very nourishing and satisfying. And then “Bruschetta”, a slice of toasted bread (I know you make your own, Abby) seasoned like said pasta, like tomatoes and spices or basil and garlic (if you want to be traditional). I live in a Mediterranean place, so pasta and pane (bread) are my choices 🙂 Have a good meal!

My sweetie cooks most of the meals which is very good because I also sometimes forget to eat when I am so busy in the studio. I love tofutti (like cream cheese made from tofu) and will have it on some rice cakes when I am pressed for time. Also, tofu dogs (hot dogs) are quick and easy since they only require 2 minutes of heating in water. I place them on a whole wheat bun and add mustard. Left overs are good but we seem to never have any. When we do sit down to eat we like to EAT!

Like what’s been hinted at or outright said already …
(1) Ask your boyfriend if he can make bigger meals so you have leftover for lunch :).
(2) Make (or request) soup, chili, or curries (all reheat really well and taste better as leftovers anyways)

One of my favourite quick meals is a toasted fried egg sandwich. I spread a little bit of spicy chutney on toasted Ezekiel bread, layer on a slice of gruyère, and top it off with a fried egg. Sometimes I add a few slices of avocado and/or tomato. Yummy and sustaining.

We snack on dried fruits (figs, apricots and mango are favorites), nuts (almond or brazil) and smoothies a lot too. This winter I’ve taken to baking enormous batches of low/no-sugar vegan cookies and munching on those throughout the day. I tried this recipe yesterday and it came out nicely. I also like to make a platter of olives, wasabi peas, fresh mozarella and crackers when I’m running late with dinner. Mmmm, I’m starting to get hungry!

We eat a lot of Toby’s tofu pate with crackers or veggies. This is a great food on the go, but it is cold, so just a snack. For a more nourishing meal in a mug, (we love to eat from our mugs). Soups of course, but also bake a quiche and have a piece for breakfast, snack or lunch. I also like something called a beirock which is a favorite and it is quick, its like a dinner roll but stuffed with a veggie mix and then baked to a golden brown. Delicious cold or hot, with soup, beans, or all alone. The beirocks are somewhat labor intensive, so make a batch and then they last a week or 5 days. Don’t forget the crock pot too. If you have a removeable crock, you can put it in the fridge and then the next day set it back into the pot and reheat for later. I have been experimenting with oatmeal bakes in the crock pot. Have fun with it. I love making food and sharing ideas on how to make it last during this busy life. cheers! Amber
